Too Many Peaches!

We have several fruit trees in the yard, one of them in its third season since planting. It’s produced a bumper crop too large for its small frame to support:

The tree needs stake support and also needs to be relieved of some of its fruit. But they aren’t all ripe yet. Are green peaches food? You bet! We used some to extend the Indian pickle (based on green mango) in our Chicken Achar and also made green peach salad.

Green Peach Salad Recipe

Ingredients are all approximate, just use to taste or what you have.

  • 4 cups green peach, shredded
  • 1 lime
  • 1/2 red onion, sliced thinly
  • 1 thumb-sized piece ginger
  • 1 serrano chile
  • 4 mint leaves
  • 1 tsp salt
  • 1 T sugar

Shred peaches in food processor or julienne if you have time. Slice onion thinly.

Peel lime. Skin ginger. Puree lime, ginger, chile, and 1/4 cup of the shredded peach. Add salt and sugar and puree.

Mix all ingredients and serve.

Would be good with added nuts (peanuts, almonds), or small fruits (currants, grapes, sweet cherry tomatoes) as well.

Here is a serving garnished with mint leaves from our garden and tiny champagne grapes which have just come to our farmers markets.

    I have to pick my peaches before they ripen because our resident baboons will break the trees when they start to ripen! This recipe will come in very handy. I also use the diced green fruit in vegetarian curries and even in stirfrys
